Based in France in the south of Normandy and founded in 1948, Michel Cluizel remains a family business and is one of the largest independent producers of fine chocolate from the raw bean to the finished bar. Michel Cluizel has connections with plantations all around the world, including Sumatra, Venezuala, Ghana, Java, Madagascar and the Ivory Coast. From these plantations they blend the chocolate used in their bars and confections.

Michel Cluizel is a stout defender of quality chocolate, declining to use soya lecithin (emulsifier) at all in their chocolate and launched their 'Ingredients Noble' label to highlight the quality of cocoa, sugar and vanilla used. Dolfin

Dolfin had the wonderful idea of combining the strength of a high quality chocolate with the subtle flavours of carefully selected natural ingredients. Tasteful chocolates created with patient skill is what you can expect from Dolfin, who offers a range of completely new delights and refined harmonies.

Unlike the principle governing flavour, which radiates throughout the chocolate, blending in with it, these recipes promise a genuine mouth watering prcession of flavours: first you taste the chocolate and then it melts. The other component, the sharp or mild spice, is revealed in all its purity, all designed to heighten your eating pleasure and experience. The milk is available with cinnamon, ground coffee, nougatine and hot masala. Quality dark chocolate is infused with earl grey, pink peppercorn, ginger, mint or orange.

Villars

A huge wooden machine called 'Herman Bauermeister' shakes as though an earthquake were beneath. This is where the cocoa bean husks are shaken off. To the next room, liquid chocolate is dried into flakes that are mixed with powdered Swiss milk. The 120 degree aroma is like a luscious chocolate sauna.

A century of tradition and creation at Villars ensured their reputation quicky spread abroad. Within a few years Villars became a supplier to several European Courts. Niederegger

Come in and check out our selection of Niederegger Marzipan from Lübeck Germany. Niederegger have been committed to producing quality marzipan since 1806. They use marzipan with the raw mixture's sugar content. Niederegger do not add any additional sugar to the 35% that is usually present in the raw mixture, and they exclusively use almonds of Mediterranean origin that convey their full aroma to the marzipan. The pure marzipan raw mixture ensures the delightful, distinguished sweetness and typical, straightforward almond taste.
