The handmade chocolates that we have in Chocolate World are from Belgium, France and Germany. Our French handmades are made by Michel Cluizel and Neideregger make our German handmade chocolates. The Belgian handmade chocolates are made by a few chocolatiers including Pierre Ledent, Gudrun and Deryke.

What is in a handmade chocolate?

• PRALINE - roasted almonds and/or hazelnuts cooked in caramelised sugar and ground as fine as desired.
• GIANDUJA - ground mixture of roasted hazelnuts and chocolate.
• GANACHE - mixture of chocolate with cream, butter or milk; may be with alcohol or flavoured.
• CROQUANT - roasted almond grains cooked in a caramelised sugar.
• ALMOND PASTE - trimmed almond ground with sugar.
• NOUGAT DE MONTE'LIMAR - poached eggs whites mixed with honey, sugar, almonds and pistachios.
• CARAMEL - mixture of milk, sugar and butter.
• LIQUEURS - alcohol mixed in sugar syrup; the sugar will naturally crystallize around the alcohol of each piece.
